Wine lists · steakhouse pairings · honest prices

Order the bottle you want, not the famous name beside it.

A steakhouse wine list is a route drawn before you sit down. This manual shows the by-the-glass block, the wide middle and the reserve back page, then the arithmetic for working backward from a printed price to a bottle that drinks like more than it cost.

The list is open and the table is waiting

The wine list lands before anyone has decided anything, and it was designed to move your eye. None of this is a failure of taste. It is what a printed page does to a table that is already hungry.

  • The type is small, the prices are large, and you order the one name you recognize mostly to stop everyone waiting on you.
  • A server stands with a pad while you flip between pages, and pointing at a number feels like saying too much about what you can spend.
  • Someone orders the ribeye, you order a red you are not sure about, and the two spend the meal not quite getting along.
  • The bottle tastes off and nobody at the table wants to be the person who turns it into a scene.

Order Wine Like You've Done It for Years

The Steakhouse Wine List Manual: Markups, Pairings, and Twenty Value Grapes

A printed list is a route drawn before you arrive; walk it yourself and you stop paying for placement.

Order Wine Like You've Done It for Years runs 64 pages and eleven chapters, and its job is narrow and useful: get you from an open list to a bottle you chose on purpose. It shows how the page is built — the by-the-glass block, the wide middle, the reserve back page — then hands you the arithmetic behind the printed price, the four sentences that send a faulty bottle back politely, and a cut-by-cut walk from filet to hanger. Twenty grapes and regions that earn their price follow, then building the order for your table and a regular's notebook. Figures and field notes keep it usable mid-meal.

Selected chapters

  1. The List Was Written Before You Sat Down
  2. The Markup, Line by Line
  3. Ten Seconds and One Finger: Reading Any List Fast
  4. By the Glass, the Bottle, and the Half
  5. Sending It Back Without Making It a Scene
  6. Every Cut Has an Argument: Pairing by Steak
  7. The Rest of the Plate: Sauce, Sear, and Sides
  8. Bubbles, Whites, and the Temperature Problem

Selected chapters

Three ways in, depending on what is in front of you

Every entry point comes from a chapter of the same book, chosen by what tonight looks like. None of them requires reading the earlier chapters first.

  1. The list is already in your hand

Go to “Ten Seconds and One Finger: Reading Any List Fast.” One finger, one price you already know, two candidate bottles — then the two sentences that let you name a bottle to a server without pointing at the price or apologising for it.

  2. You are choosing a format, not just a wine

“By the Glass, the Bottle, and the Half” runs the open-bottle math, half bottles, magnums, corkage and what a preserved pour really means, so the format fits the table in front of you instead of flattering it.

  3. The steak is ordered, now the bottle

“Every Cut Has an Argument” walks filet to ribeye to hanger with the tannin and acid each cut asks for. Follow it with “The Rest of the Plate” for béarnaise, blue cheese, creamed spinach and a heavy hand of pepper.

From the author

Thirty years of other people's wine lists

I spent more than thirty years in restaurant dining rooms, a good share of them in steakhouses, and the last stretch writing wine lists and training the people who hand them to you. I am not a master sommelier. What I know came from standing at tables, watching guests study a page I had built, and learning that a plain explanation does more for a meal than a lecture about soil.

The lesson I keep coming back to came from a regular who bought cattle for a living. I poured him a Washington Cabernet blind, beside the Napa label he always ordered, and he switched for two years. Not because anyone told him to — because nobody had put the two glasses in front of him without a name to lean on. That is what I tried to put in this book.

Match the bottle to the steak you cook

The pairing chapters go cut by cut, then through the sauces and sides — béarnaise, blue cheese, creamed spinach, charred asparagus — so one bottle keeps working across the whole plate.

Questions

I know almost nothing about wine. Is this over my head?

No. The book starts with how a page is arranged and how a price is built, not with tasting vocabulary. The book explains markup, wholesale cost and printed price in plain words, and the pairing chapters are organized by steak cut — filet, ribeye, hanger — rather than by regions you are expected to already know.

Why pay for the book when free wine videos are everywhere?

A video is good at one bottle at a time. This is the complete route in order: how the list is built, the markup arithmetic, the ten-second pass, the sentences for naming a bottle or sending one back, then cut-by-cut pairings and twenty value grapes. It is arranged in the order you will actually need it, in a PDF you can keep on your phone at the table.

What exactly is in this edition?

Order Wine Like You've Done It for Years is 64 pages and eleven chapters. It covers list design, markups, bottle formats, faulty bottles, steak pairings, sides and sauces, sparkling and white wines, twenty value grapes, ordering for a table, and the habits of a regular.

What format do I get?

PDF. That is the only format listed for this edition. Order Wine Like You've Done It for Years is delivered as that file, and its 64 pages and eleven chapters are the ones listed above.

Does it cover pours by the glass, half bottles and corkage?

Yes. “By the Glass, the Bottle, and the Half” works through open-bottle math, half bottles, magnums, corkage and what a preserved pour really means, so you can choose the format that fits the table rather than the one that flatters it.

Is this only about steakhouses?

The pairing chapters are built around the steakhouse plate: filet, ribeye, hanger, béarnaise, blue cheese, creamed spinach, charred asparagus and a heavy hand of pepper. The chapters on list design, markups, bottle formats and returns deal with the printed list itself.

The bottle I ordered tastes wrong. Does the book tell me what to do?

“Sending It Back Without Making It a Scene” separates corked, oxidized, heat-damaged and leaking bottles from simple preference, gives you four sentences that get a bad bottle off the table politely, and includes an honest account of who pays for it when they do.

Do I have to read it cover to cover before my next dinner?

No. “Ten Seconds and One Finger” is a single pass you can use the same evening, and the chapter is short enough to use at the table. Start there and read the rest when you want the arithmetic behind it.

Is there a money-back guarantee?

Yes. Every order has a 7-day money-back guarantee. To ask for a refund, just reply to the purchase email you got from Hotmart. A real person answers. The book is a PDF download; no printed copy is included.

You do not need a sommelier's vocabulary

You need to know how the page was built, what the printed price is carrying, and which cut is in front of you. That is what I put in the book, and it is meant to be used with a list in your hand.
